Spicy Pickled Garlic: What It Tastes Like & 9 Ways to Use It

People who have never tried pickled garlic usually expect it to taste like a raw clove: sharp, hot and lingering. It does not. Brine softens garlic's bite into something mellow, savory and almost nutty, while the clove keeps a satisfying crunch. Add habanero and you get one of the most addictive jars on a snack board.

Here is what spicy pickled garlic tastes like, why ours won a Good Food Award, nine easy ways to use it, and answers to the questions we hear most.

Jar of The Spicy Garlic by [PICKLES], spicy pickled garlic in a 17 oz glass jar
The Spicy Garlic, 17 oz. 2026 Good Food Award winner
The short version: The Spicy Garlic is garlic pickled with habanero. It is a 3 out of 5 on our heat scale, like every jar we name "Spicy", and it won a 2026 Good Food Award. Eat it straight from the jar, on a board, or in a Bloody Mary.

What does spicy pickled garlic taste like?

Three things happen at once:

  • The garlic mellows. Time in a tangy brine takes the harsh edge off raw garlic. What is left is savory and rounded, closer to roasted garlic than raw, but with a crunch.
  • The brine adds tang. Each clove soaks up the vinegar brine, so it tastes bright and sharp, like a pickle.
  • The habanero builds. Habanero heat is fruity and warm, and it builds over a few bites rather than hitting all at once.

The result is a snack that people who "do not even like garlic" end up eating by the forkful.

How hot is The Spicy Garlic?

It sits at 3 out of 5 on our spicy pickles heat scale. Anything we name "Spicy" is a 3 and gets its heat from habanero, so The Spicy Garlic is as hot as The Spicy Okra, The Spicy Green Beans, The Spicy Carrots and The Spicy Cauliflower. Expect real, building warmth, but still a jar you can snack on.

For something gentler, The Heat and Sweet is a 2 out of 5. For more fire, The Ghost Pickle is a 4 out of 5 and the only jar of ours that truly stings.

A Good Food Award winner

The Spicy Garlic won a Good Food Award in 2026. The Good Food Awards are a national program that recognizes craft food makers for flavor and for how they make their food. We are proud that a jar of garlic from a small kitchen in Atlanta made the list. Read more about it in why our pickles won a 2026 Good Food Award and Flavor of Georgia.

9 ways to use spicy pickled garlic

1. Straight from the jar

The most popular way. Cold, crunchy, tangy and warm. Keep a fork next to the jar.

2. In a Bloody Mary

Skewer two or three cloves as a garnish, and add a splash of the brine to the mix for extra savory heat. Pair it with The Spicy Okra or The Spicy Green Beans on the same pick.

3. On a charcuterie board

Next to salami, aged cheddar, olives and crusty bread. Pickled garlic is the item guests ask about. Our charcuterie pickles guide has more pairing ideas.

4. Smashed onto toast

Smash a few cloves with a fork and spread on toasted sourdough with olive oil, a little salt and a slice of tomato.

5. In pasta

Slice cloves thinly and toss into spaghetti with olive oil, parmesan and a squeeze of lemon. The garlic is already mellow, so it needs no cooking.

6. In tacos and rice bowls

Chop and scatter over tacos, burrito bowls or fried rice for a crunchy, spicy finish.

7. In salad dressing

Mince one clove and whisk it with olive oil, a spoonful of the brine and a little mustard. Instant spicy garlic vinaigrette.

8. On pizza

Slice and scatter over pizza after it comes out of the oven.

9. Blended into dips

Blend a few cloves into hummus, ranch or a sour cream dip for heat and depth.

Save the brine: spicy garlic brine is liquid gold. Use a splash in Bloody Marys, marinades, potato salad or a dirty martini. For more ideas, see 5 ways to use pickle juice.

Spicy pickled garlic FAQ

Is pickled garlic as strong as raw garlic?

No. Pickling mellows garlic a lot. It still tastes clearly of garlic, but without the harsh bite or the burn of a raw clove.

Why does pickled garlic sometimes turn blue or green?

Garlic contains natural compounds that can react with acid and turn blue or green, especially in very fresh garlic. It is a well-known natural reaction, food scientists consider it harmless, and it does not change the flavor.

Can I eat pickled garlic straight from the jar?

Yes, that is how most people eat it. The cloves are ready to eat.

How long does a jar keep?

Unopened, every jar is shelf-stable for up to two years. Once open, keep it in the fridge, keep the cloves under the brine and use a clean fork.

Is it too spicy for someone who does not like heat?

It has real habanero warmth (3 out of 5). If you want garlic flavor without heat, try The Banana Pickle, a well-balanced garlic dill with no heat at all, or the garlicky Kosher Dill Spears.
